Ingredients
  

  • 1 tablespoon sumac
  • 1 tablespoon toasted sesame seeds
  • 1 tablespoon dried thyme crushed (or substitute with oregano)
  • 1 tablespoon cumin see instructions for using whole or ground
  • 1 tablespoon coriander
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon or more Aleppo chili flakes optional

Method
 

  1. In a small mixing bowl, combine all the ingredients thoroughly, ensuring an even distribution of flavors. Transfer the mixture to an airtight container to preserve its freshness and potency.
  2. For a deeper, more robust flavor, toast whole cumin and coriander seeds in a dry pan over medium heat until they release their fragrance. Allow them to cool slightly before grinding them into a fine powder. If using pre-ground spices, simply mix them directly with the other ingredients.
