Ingredients
  

  • 6 oz cooked shrimp or shredded chicken
  • 6 oz soba noodles
  • 1 red bell pepper thinly sliced
  • 3 garlic cloves minced
  • 1/4 cup chopped green onion
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes adjust to taste
  • 2 –3 tablespoons toasted sesame seeds
  • 1 tablespoon olive oil for cooking

Method
 

  1. Begin by cooking the soba noodles in a pot of boiling water for 5 to 6 minutes until tender but not mushy. Drain thoroughly and set aside.
  2. Meanwhile, remove the tails from the shrimp if desired. Thinly slice the red bell pepper into strips. In a large skillet over medium-high heat, warm the olive oil and sauté the shrimp and bell pepper together just until the peppers begin to soften slightly.
  3. Lower the heat to medium, then add the cooked soba noodles directly into the skillet, stirring gently to combine the ingredients without breaking the noodles.
  4. In a separate small bowl, whisk together the honey, soy sauce, rice vinegar, sesame oil, ground ginger, red pepper flakes, and minced garlic until the mixture is smooth and well-blended.
  5. Pour the sauce over the soba noodles, shrimp, and bell pepper. Toss gently to coat all ingredients evenly. Let everything simmer together for 6 to 8 minutes, stirring occasionally, until the sauce thickens slightly and clings to the noodles.
  6. To finish, sprinkle the dish generously with toasted sesame seeds and chopped green onions. Serve hot and enjoy a flavorful meal ready in under 30 minutes.
