Shortbread Cookies Recipe

This easy and delightful recipe for melt-in-your-mouth shortbread cookies is simply irresistible!

Ingredients
  

  • 1 1/2 cups all-purpose flour 180g
  • 1/2 cup confectioners' sugar
  • 10 tbsp unsalted butter at room temperature (142g)
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon kosher salt optional

Method
 

  1. In a stand mixer equipped with a paddle attachment, cream together the butter and vanilla extract until smooth and fluffy.
  2. Gradually add the confectioners' sugar and kosher salt, continuing to mix until well incorporated.
  3. Scrape down the sides of the bowl, then add the flour while mixing on low speed. Scrape the bowl once more and mix until the dough is fully combined.
  4. Shape the dough into a rectangular prism, wrap it tightly in plastic wrap, and refrigerate until firm, at least one hour.
  5. Preheat your oven to 350°F (177°C). With a sharp knife, cut the chilled dough into 1/2 inch thick slices.
  6. Arrange the slices on a baking sheet lined with a silicone mat or parchment paper, spacing them at least an inch apart.
  7. Use a fork or skewer to create a decorative pattern on the top of each slice.
  8. Bake for approximately 10 minutes, rotating the baking sheet halfway through the baking time to ensure even cooking.
  9. Transfer the cookies to a wire rack to cool completely.

Notes

You can prepare the cookie dough well in advance; it lasts about a week in the refrigerator and a month in the freezer. Be sure to wrap it thoroughly and let it warm up slightly before cutting. If your butter isn't at room temperature, cut it into slices and microwave at 50% power in 5-second intervals, flipping the butter between bursts. Enhance these cookies with your favorite toasted nuts and spices for added crunch and flavor. The dots on the bottom can be arranged in any pattern you like, so have fun experimenting. If you have kids around, let them join in the fun!
