Shakshuka is a traditional North African and Middle Eastern dish featuring poached eggs in a flavorful, spiced tomato sauce. It's a quick, healthy meal that can be prepared in under 30 minutes.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 1 red bell pepper seeded and diced
  • 4 garlic cloves finely chopped
  • 2 teaspoon paprika
  • 1 teaspoon cumin
  • ¼ teaspoon chili powder
  • 1 28-ounce can whole peeled tomatoes
  • 6 large eggs
  • salt and pepper to taste
  • 1 small bunch fresh cilantro chopped
  • 1 small bunch fresh parsley chopped

Method
 

  1. Heat the olive oil in a large sauté pan over medium heat. Sauté the diced onion and bell pepper for about 5 minutes, or until the onion turns translucent.
  2. Incorporate the garlic and spices, cooking for another minute to release their aromas.
  3. Add the tomatoes and their juices to the pan. Using a large spoon, break down the tomatoes until they are well crushed. Season the mixture with salt and pepper, then bring the sauce to a gentle simmer.
  4. Create small wells in the sauce with the back of your spoon and crack an egg into each well. Allow the eggs to cook for 5 to 8 minutes, or until they reach your desired level of doneness. Cover the pan with a lid to speed up the cooking process if needed.
  5. Just before serving, sprinkle with chopped cilantro and parsley for a fresh burst of flavor.
