Ingredients

  • pounds Brussels sprouts trimmed, halved, with stems and rough outer leaves removed
  • 3 tablespoons extra virgin olive oil divided
  • ¾ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey

Method

  1. Preheat your oven to 425°F, positioning the oven rack in the center. Line a baking sheet with heavy-duty aluminum foil for easy cleanup.
  2. Place the Brussels sprouts directly on the prepared baking sheet. Drizzle with 2 tablespoons of olive oil, then sprinkle with salt and pepper. Toss the Brussels sprouts to coat them evenly, ensuring each piece is well-seasoned. Roast in the oven for about 20 minutes, stirring once halfway through, until the sprouts are tender and beautifully golden.
  3. Remove from the oven and drizzle the remaining tablespoon of olive oil, the balsamic vinegar, and honey over the roasted Brussels sprouts. Toss them gently to evenly coat. Taste and adjust seasoning if needed, then serve immediately.
