Ingredients
  

For pink drink:
  • 2 cups white grape juice
  • 1 cup unsweetened coconut milk
  • 2 tablespoons strawberry simple syrup *see recipe below
  • 1/2 cup sliced strawberries fresh
For strawberry simple syrup:
  • 1-1/2 cups diced strawberries
  • 1 cup granulated sugar
  • 1 cup water

Method
 

For pink drink:
  1. In a pitcher, combine white grape juice, unsweetened coconut milk, and strawberry simple syrup.
  2. Stir the mixture until well blended. Taste and add more strawberry simple syrup if desired.
  3. To serve, pour the drink over ice and garnish with fresh strawberries.
For strawberry simple syrup:
  1. In a medium-sized saucepan, combine diced strawberries, granulated sugar, and water. Stir gently to mix.
  2. Place the saucepan over medium heat and bring the mixture to a simmer. Cook until the strawberries become soft and the syrup thickens, about 15 minutes.
  3. Remove the pan from heat and let the syrup cool for approximately 30 minutes.
  4. Strain the syrup through a fine mesh strainer into an airtight container or jar. Store in the refrigerator for up to a week.
