Ingredients
  

  • 4 cups ice
  • 1/2 cup frozen pineapple chunks refer to How to Cut a Pineapple
  • 6 ounces white rum
  • 6 ounces pineapple juice
  • 6 ounces cream of coconut preferably Coco Lopez brand
  • 4 ounces golden or añejo rum optional but highly recommended
  • Pineapple leaves or wedges for garnish optional

Method
 

  1. Combine the ice, frozen pineapple chunks, white rum, pineapple juice, and cream of coconut in a blender. Blend the mixture until it reaches a smooth, consistent texture.
  2. Pour the blended mixture into glasses. If desired, gently pour the golden rum over the top so that it floats.
  3. Garnish with pineapple leaves or wedges for a decorative touch and serve immediately.

Notes

While the classic blended piña colada recipe typically doesn't include frozen pineapple, I believe it enhances the flavor and cuts down on the ice required. Like many tiki-style beverages, this recipe incorporates various types of rum to create a harmonious and flavorful drink.
