Ingredients

  • 4 large potatoes peeled and cubed
  • cup olive oil
  • 1 tablespoon minced garlic
  • ½ teaspoon salt
  • ½ teaspoon dried basil
  • ½ teaspoon dried marjoram
  • ½ teaspoon dried dill weed
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon dried parsley
  • ½ teaspoon crushed red pepper flakes

Method

  1. Preheat your oven to 475 degrees F (245 degrees C).
  2. In a spacious bowl, mix together the olive oil, minced garlic, salt, dried basil, marjoram, dill, thyme, oregano, parsley, and crushed red pepper flakes. Make sure the spices are well blended into the oil.
  3. Add the cubed potatoes to the bowl, tossing them gently to ensure each piece is thoroughly coated with the seasoned oil mixture.
  4. Arrange the potatoes in a single layer on a roasting pan or a baking sheet, ensuring they are evenly spread out.
  5. Roast the potatoes in the preheated oven, turning them occasionally to ensure even browning on all sides. Roast until the potatoes are tender and golden brown, which should take about 20 to 30 minutes.
  6. Serve the potatoes hot and enjoy the flavorful, crispy texture!
