Ingredients
  

  • 1 bunch cilantro thoroughly washed and chopped
  • 1 15-ounce can organic corn, rinsed and drained
  • 2 Roma tomatoes finely chopped
  • 1 jalapeño deseeded and diced
  • ¼ cup sweet onion diced
  • Juice of 2 limes
  • Salt and pepper to taste

Method
 

  1. In a large mixing bowl, combine the corn, tomatoes, sweet onion, jalapeño, and chopped cilantro.
  2. Squeeze in the lime juice and season with a pinch of salt and a few grinds of black pepper.
  3. Stir everything together thoroughly until the ingredients are well mixed and evenly coated in lime juice.
