Ingredients
  

  • 2 cups finely grated unsweetened desiccated coconut not shredded
  • 3/4 cup thick cream such as Fussell's or Carnation (170 mL)
  • 3- ounce package of colored Jello powder

Method
 

  1. Begin by combining the thick cream and Jello powder in a mixing bowl. Stir thoroughly until the mixture is smooth and evenly blended.
  2. Gradually add 1 1/2 cups of desiccated coconut into the bowl, mixing until the ingredients come together to form a cohesive mixture.
  3. Scoop out tablespoon-sized portions of the mixture and roll them into smooth, round balls.
  4. Take the remaining 1/2 cup of desiccated coconut and spread it out on a plate. Roll each ball in the coconut until it is fully coated.
  5. Arrange the coated balls on a baking sheet in a single layer. Transfer the sheet to the refrigerator and chill for at least 2 hours to allow the balls to firm up.
  6. Serve these delightful treats chilled, and enjoy their vibrant flavor and creamy texture!
