Ingredients
  

  • 8 bone-in chicken thighs
  • 1 tablespoon extra-virgin olive oil
  • ¼ cup honey
  • ¼ cup Dijon mustard
  • 2 garlic cloves minced
  • 1 ½ teaspoons finely chopped fresh rosemary
  • 1 ½ teaspoons finely chopped fresh thyme
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Method
 

  1. Begin by preheating your oven to 350°F (177°C). Prepare a baking dish and arrange the chicken thighs in it, ensuring they are patted dry with a paper towel to remove excess moisture.
  2. In a small bowl, combine the honey, Dijon mustard, minced garlic, olive oil, rosemary, thyme, salt, and pepper. Stir well until the mixture is smooth and thoroughly blended.
  3. Generously coat the chicken thighs with the honey mustard mixture, either by brushing or spooning it over the top, making sure each piece is well-covered.
  4. Place the baking dish in the oven and bake for 40 to 45 minutes, or until the chicken reaches an internal temperature of 175°F (80°C) and is cooked through. For a crispier skin, switch on the broiler for the last 2 to 3 minutes of cooking.
