Ingredients
  

  • 12 ounces 3 cups elbow macaroni (regular, whole wheat, or gluten-free options available)
  • 1 cup 240 ml whole milk
  • 1/2 cup 126 grams regular full-fat cottage cheese
  • 1 1/2 tablespoons 15 grams cornstarch
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • 1 cup 113 grams / 4oz freshly grated sharp cheddar cheese
  • 1/2 cup 50 grams grated Pecorino Romano or Parmesan cheese

Method
 

  1. Prepare the pasta according to the package instructions, ensuring it is al dente. Avoid overcooking for the best texture.
  2. As the pasta cooks, blend the cheese sauce ingredients. Combine whole milk, cottage cheese, cornstarch, salt, garlic powder, pepper, cheddar cheese, and Pecorino Romano or Parmesan cheese in a blender. Blend on high until the mixture is completely smooth and creamy.
  3. Once the pasta reaches al dente, drain it thoroughly but refrain from rinsing.
  4. Return the drained pasta to the pot.
  5. Pour the blended cheese sauce over the pasta, and heat on medium until the sauce is hot and silky.
  6. Stir in the cooked pasta, ensuring each piece is evenly coated with the cheese sauce.
  7. Allow any leftovers to cool fully before storing them in an airtight container in the refrigerator. They will keep for up to 4 days.
