  • 6 ounces goat cheese
  • 1 cup pomegranate arils
  • 1 cup shredded Gruyère or sharp white cheddar
  • 1/2 cup sliced toasted almonds
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh thyme
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • Crackers for serving

Method
 

  1. In a mixing bowl, blend the softened cream cheese, goat cheese, and shredded Gruyère until smooth and creamy. Gently fold in the toasted almonds, fresh parsley, and thyme, ensuring the ingredients are evenly distributed. Season with a dash of kosher salt and a grind of fresh black pepper to enhance the flavors.

Spread the pomegranate arils on a flat plate, then carefully roll the cheese ball over the arils, pressing gently to ensure a thorough coating. Fill any gaps with additional arils by hand for a polished appearance.
