- Begin by placing the chicken drumsticks in a sizable mixing bowl. Add the minced garlic and onion, oyster sauce, salt, black pepper, seasoning mix, egg, and cornstarch. Mix thoroughly until each piece of chicken is well-coated with the seasoning mixture.
- In a large pot, heat the oil over medium heat. Once the oil is sufficiently hot, carefully lower the chicken pieces into the pot one at a time. Ensure the oil almost completely submerges the chicken and bubbles gently during cooking. Fry the chicken until it turns a beautiful golden brown and the skin crisps up perfectly. Depending on your oil temperature, this could take anywhere from 15-20 minutes. Aunties often allow the chicken to cook longer at a lower heat to achieve the desired crispiness. Once done, remove the chicken and place it on paper towels to absorb the excess oil. Continue this process in small batches until all the chicken is cooked to perfection.
