- Begin by layering the arugula on the bottom half of the focaccia slices. Place the mozzarella slices and tomato slices on top of the arugula. If you prefer, add the roasted cherry tomatoes and a few slices of pickled red onions for an extra burst of flavor.
- Next, top with fresh basil leaves, and lightly drizzle everything with extra-virgin olive oil. Finish by sprinkling with flaky sea salt and freshly ground black pepper to taste. Place the top half of the focaccia on each sandwich and serve immediately.
