Ingredients
  

  • 1 ounce Parmesan cheese freshly grated
  • 2 cloves garlic minced
  • 8 roma plum tomatoes, diced
  • 1 loaf French bread cut into ¼-inch slices
  • cup chopped fresh basil
  • 2 teaspoons extra-virgin olive oil
  • 1 tablespoon extra-virgin olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon good quality balsamic vinegar

Method
 

  1. Gather all ingredients together.
  2. Preheat the oven to 400 degrees F (200 degrees C).
  3. Brush both sides of the bread slices with 1 tablespoon of olive oil. Arrange them on a large baking sheet and toast in the oven until golden brown, about 5 to 10 minutes, turning them over halfway through.
  4. While the bread is toasting, combine the diced tomatoes, chopped basil, freshly grated Parmesan cheese, and minced garlic in a bowl.
  5. Add the balsamic vinegar, 2 teaspoons of extra-virgin olive oil, kosher salt, and freshly ground black pepper to the tomato mixture. Stir everything together until well combined.
  6. Spoon the tomato mixture onto the toasted bread slices.
  7. Serve immediately and enjoy your delicious bruschetta!
