  • ¾ cup white sugar

  2. Place the quartered apples into a large stockpot and pour in enough water to submerge them by at least 2 inches. Add the sugar, cinnamon, and allspice, stirring to combine the flavors evenly. Set the pot over medium-high heat and bring the mixture to a rolling boil. Let it boil, uncovered, for about 1 hour to allow the apples to soften and release their juices.
  3. After an hour, reduce the heat to low, cover the pot, and let it simmer for another 2 hours. This gentle cooking process helps develop a rich, spiced apple flavor.
  4. Once the apples have fully softened, carefully strain the mixture through a fine-mesh sieve to remove the solids. For an even smoother cider, pour the liquid again through a cheesecloth-lined sieve, ensuring it’s free of any remaining apple bits.
