Ingredients
  

  • 1 small yellow squash sliced
  • 1 small zucchini sliced
  • 6 ounces mushrooms sliced
  • 1 red bell pepper chopped
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 1 tablespoon grated parmesan cheese
  • 1 tablespoon Italian seasoning

Method
 

  1. In a medium bowl, combine the yellow squash, zucchini, mushrooms, bell pepper, and broccoli florets.
  2. Drizzle the olive oil over the vegetables and sprinkle with Italian seasoning and parmesan cheese. Gently toss everything together to ensure an even coating.
  3. Arrange the seasoned vegetables in the air fryer basket in a single layer. Set the temperature to 390°F and cook for 5 minutes.
  4. After 5 minutes, open the air fryer and toss the vegetables to promote even cooking. Cook for an additional 5 minutes, or until the vegetables are tender and lightly browned. Serve warm.
